There was a time when people turned their nose up to diabetic dessert recipes, but not any more.

Easy Diabetic Desserts
Diabetic Peanut Butter Cookies
1/3 cup of plain flour
1/4 teaspoon of baking soda
1/4 teasspoon of baking powder
1 pinch of salt
2 tablespoons of shortening
2 tablespoons of peanut butter
1 teaspoon of Sweet ‘n Low
1 beaten egg
Just add mix up everything but the egg in a mixing bowl, and then add the beaten egg, and mix it well with your kitchenaid Mixer. Drop large teaspoons of the diabetic cookie dough onto a greased cookie sheet, and bake at 350 degrees for about 10 minutes.
Cream Cheese Brownies for people with diabetes
1-8oz pkg reduced fat cream cheese, softened
¼ cup skim milk
Sugar substitute to equal 10 tsp sugar
½ tsp vanilla
⅔ cup cold coffee (substitute with water)
About 15oz of low fat brownie mix
Nonstick nonfat cooking spray
1. Combine the brownie mix and coffee in a large bowl, and stir until well blended. Coat a 13×9 baking dish with cooking spray, and pour the brownie mixture into it.
2. Using a mixer beat the remaining ingredients together until smooth. Spoon the cream cheese mixture by dollops ( about ½ tbsp.?) onto the top of the brownie mixture, so that you may have cream cheese on each individual serving. As you are spooning, lightly swirl the mixture slightly into the brownie batter.
3. Bake in a 350 ° preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
16 servings 1 serving = 1 ½ starch, ½ fat
